We are
incredibly lucky to have another family connection into what is arguably THE
most exciting Champagne House and we think this is probably their finest wine.
The Chardonnay is all Grand Cru rated and only the first pressing is used. The
mousse is incredibly delicate due to a very old technique and long aging on the
lees. Beautifully elegant and of the very highest quality, this is a stunning
Champagne.

CHARACTERISTICS
Pale gold, with a hint of green, the
bubbles are incredibly fine, creating a velvety mousse. On the nose it is
classic Chardonnay, with lemon and grapefruit, hints of green apple and touches
of white blossom. As it opens the toasted almond and brioche aromas come
through. The palate is delicate, complex and lingering with first the citrus,
then pulped white fruits and background minerality on the clean, fresh finish.
A beautiful apero wine, but could also accompany see foods nicely.
THE
WINERY
Bruno Paillard is a pioneer within the Champagne
region. In 1981, at the age of 27, with
no vineyards and no money, Bruno set out to start his own Champagne house in a
region where a new house had not been created in nearly a century. He initially rented a cellar and carefully selected
the grapes from independent growers. He
moved on by inventing the first completely “Ex Nihilo” cellar which consists of
extremely strict control of temperatures, lighting and humidity. He was quickly
recognized as producing some of the best wines in the region. In the 1990s he built
a state of the art winery with stainless steel, glass and wood, combining
traditional know how with the newest qualitative techniques. In 1994 he started to purchase his first
vineyards and today has 26 hectares (1/3 of production needs) including 12
hectares of Grand Crus. The dedication and passion to produce only the highest
quality wines is outstanding. This includes the selection of the highest
quality grapes, use of first pressing only, separate vinifications, addition of
“reserve wines," ageing 2 to 3 times longer than stipulated by the AOC and
very small dosage, respecting the purity of the wines.
